Mushroom & sweet potato quiche

On a whim of needing something to do with the mushrooms in our fridge I decided to make a quiche this morning. Lucky for me I am married to a pastry master. I hate making my own pastry - messy and boring if you ask me - but he is so darn good at it that I set him to work on making me some dough. Anyway's you need savoury pastry dough, rolled out and lining you quiche dish - I'd recommend blind baking it first too. Here's a good recipe.


You need:
* Pastry, blind baked for 15 mins
* Half a large sweet potato chopped up into small cubes
* Mushrooms chopped finely
* Fetta or another solid, mild cheese, cubbed
* 1/2 cup of natural yoghurt
* 1/2 cup of thickened cream
* 3 eggs
* Grated chedder
* Parsley & thyme
* salt & pepper

Then:
Preheat your oven to 180.
Once I had chopped  it, I steamed the sweet potato in the microwave for 3 mins.
Whisk up your eggs, yoghurt and cream along with salt and pepper to your taste. Roughly tear up your herbs and mix them in.
I put all my mushrooms on the pastry, then sweet potato and cheese. Pour the liquid mixture evenly over the vege's. Sprinkle the grated cheddar on top and add a dash of nutmeg. Pop in the oven for about 45 minutes, until it is set.
Serve it up with a green salad and perhaps a glass of white wine... or cider.
