Gran's winter soup.

This soup is so easy and hearty and tasty. And it smells like lunch time at my Gran's house in England. I've made this ready to eat in 30 mins before, so it's pretty quick and easy. Oh and definitely have some crusty bread and butter to serve with it.

You need:
* 1 medium onion, roughly chopped.
* Half a bunch of celery, chopped up into small half moons
* 3 large Carrots, cut into medium thickness circles.
* Medium sized sweet potato, cut into small hunks.
* 3 cups of dry red/orange lentils.
* 1.5 litres of boiling water.
* 4 heaped teaspoons of veggie stock (Massel is the best.)
* Handful of roughly chopped flat leaf parsley.

Then:
Fry off your onion until it goes clear in some oil in your pot. Add the stock powder to your 1.5 litres of boiled water in a measuring jug and give it a good stir to dissolve it. Add the celery and carrot to your pot and fry for around 2 minutes. Add the sweet potato and the stock to the pot. Throw in your 3 cups of red lentils, give it a swirl, pop the lid half on and leave it for around about 15 minutes. Give it the occasional stir as the lentils will want to stick to the bottom a bit. It's ready when the lentils are all mushy and the vegetables are soft enough to put a fork through. Chuck in the parsley 5 minutes before its ready to serve.
Yum! This makes your house smell sooooooo good!
