weird food stuffs
I just had a memory. When I was little I loved... wait for it... cottage cheese and tomato sauce sandwiches. Gross huh? But I think I could probably still stomach it. My mum loved vegemite and avacado sandwiches, completely vile to me, but there it is. Things that might seem odd but I still enjoy to this day: apple with peanut butter, celery with peanut butter and sultanas if you're getting fancy... oh and baked beans with wait for it.... peanut butter in. Okay so may be it's just a PB thing. I'm wondering, what are everybody else's weird food loves?
ps. I had my first Reeses peanut butter cup the other day. So disgustingly good.

So my new routine is getting on a plane on a Monday evening. Sleeping under the worlds warmest doona, which is good because I'm lacking a husbands body warmth (thanks mum). Teaching myself to exhaustion on Tuesday and catching the overnight train back to Sydney. Overnight trains. Oh man. With a pillow (folded coat), ear plugs (I actually invested in these) and eye mask (scarf wrapped around the head) it's almost bearable and I get about 3 hours sleep. The New Life is good I think. I'm liking seeing my parents more. I'm loving the country air. And I think I like teaching. I can keep control of my class, I even enjoy marking. I was standing writing at a white board and it didnt feel weird. I didn't feel like a fraud. It felt good. Now I'm off to catch the train.

Mantelpiece Monday
ermmm or Tuesday as the case may be... I blame work.
Here we are in the kitchen. The painting is by a friend of ours, a practise canvas which she gave to me because I loved it so much. The 'home' bunting was made for Tim and I when we got back from our 3 month Africa adventure by our house mate. The vintage tins are op shop finds of Husbando, the scales are another housemates, the lemons are form a housemates family tree, and the succulent is called herbert. (Okay it doesn't really have a name but if it did that's what it would be called). This mantlepiece doesn't usually look this neat either... i tarted it up for the photo shoot!

My creative space.
So by popular request (erm... one request) here's how to make a plain ol' twig that fell from the councils tree into my yard into an exciting mantelpiece feature!
1. Collect an interesting and smooth twig/stick, that will sit nicely on a mantelpiece or in a jar. Mine is about 50cm long.
2. Pick out some embroidery thread in a selection of colours. It uses quite a lot of thread so make sure you have a full amount of the colours you want the most of.
3. Turn on a tv show that doesnt require too much of your attention.
4. Pull an inch or so of thread out of all your thread bundles and put them all in a line and hold them against the bottom (the least visable part of your stick when it is lying in the position it balances in) of the stick with your left thumb. Make sure they are all flat in a row not twisted and on top of each other.
5. With the first colour you want, start wrapping it around the twig and going over the treads as well. Keep the threads underneath neat.
6. Do it for as long as you like and then switch threads when you are ready, tucking the one you had been doing in with the ones lying flat.
7. Start the next episode of your tv show and keep on winding. 8. Once you get the last wrap of a colour wind over it with the next colour for a good centimetre and then snip. Essentially as you get towards the end of your stick you will be wrapping over less and less threads.
9. For the last thread just tuck the last wrap under the previous and tie it in a knot on itself.

Cauliflower pasta
I adore cauliflower. It's gone from being a vegetable only good covered in white sauce and cheese to almost surpassing the zuccini (courgette) in my favourites. And, being a vegetarian, I have favourites.
This was super quick and delicious, I've been loving getting back into the savoury cooking now that I'm around at night again.

Central heating
So now I get what my boy has been complaining about all these years. Working from home is cold in winter. There I was whining about never seeing natural light yet blissful in a regulated temperature. Now, when I get up to work on a lecture at my desk, this is what I wear: Tights, jeans, socks x 2, ugg boots, long sleeve top, t-shirt, jumper, jacket, scarf annnnnnd Russian hat. It's the hat that makes the look I think. Et voila: Me!

Mantelpiece Monday
Our living room mantelpiece gets a revamp whenever I spend much time in there (which isn't heaps to be frank) I'm hardly ever satisfied with it. I'm inspired by Estelle to try and mix things up a little more now. We have a mantel in the kitchen too...
Here we have our houseplant called Godfrey, a succulent with a party umbrella stuck in its pot (left over from my Mexican party I think), a twig wrapped in colourful thread (a project of mine inspired by seeing it somewhere and going; I could do that), my housemates bunch of flowers for her birthday, the mirror I found at the op shop, my giraffe from South Africa, a tin monkey (contributed by another housemate) and a wooden box with an art piece inside it (a housemate art school project).

How it went...
Today at work in my lunch break I walked past kangaroos.
Today at work when my second year students left, they said "That was great, thanks".
You couldn't wipe the dirty great big smile off my face. Enhanced by "I told you so" by husbando and then amazing food cooked by my dad. No pictures I'm afraid chaps! But... phew, huh?! Now I just need this to turn into a permanent job and I can really start dreaming about our house and garden and the next stage of our life, instead of dreaming about it... but as a maybe.
It's scary how much work I have to do though, as well as writing my next lot of lectures for the uni, I'm also doing lighting console training, plus casual lighting operating around Sydney... the blog blog may stay neglected for a little while longer yet.

It starts...
Tomorrow. I have a staff card. I'm an academic people. An academic. And I just got into theatre coz I wanted to climb ladders and do a boys job. (not entirely true but partially). I've been shopping for appropriate work clothes. I now own a blazer. A very nice comfy grey t-shirt material blazer but still... it has a collar. I'm excited about what this could turn into, the air down here is so wonderful, but not keeping my hopes up either. The alternative if this doesn't work out if just fine too.

coco lemono
I just remorselessly ate the last piece of dessert.
Coconut and lemon pie
from Marie Claire 'Fresh' - Michele Cranston
You need
26cm pie shell OR
320gs plain flour
200gs Butter
3 tablespoons cold water
Rub butter and flour together. Add water and combine together to form dough. Refrigerate for 30 mins. Roll out thinly and place in greased 26cm pie case. You will have some left over. Blind bake for 20 mins then set aside. (Based off a Stephanie Alexsander recipe)
125g unsalted butter
345g caster sugar
4 large eggs
170ml plain yoghurt
1 tsp vanilla extract
juice and zest of one lemon
1 cup dessicated or shredded coconut
Preheat the oven to 180c. Cream the butter and caster sugar together then add the eggs one at a time, beating between each addition. Throw in the yoghurt, vanilla and lemon and beat thoroughly. Add the coconut, I used half dessicated and half shredded and it made it the most awesome texture. Pour this into your pie case and pop it in the oven for about35 - 40 mins. It will still be a touch wobbly but firm and golden brown all over when it is time for it to come out.
Dust with icing sugar and serve with cream.
Melt.In.Your.Mouth.

Needless to say, it's been busy.
