Remember this post... and remember how I said I'd get around to giving it a go and posting a recipe well... I did, and I didnt...
I did in fact make them, last week. But only because a recipe for them, from a lovely reader arrived in my inbox! Thank you kind sir! Inspired, he gave the muffins a go, using a savoury muffin recipe from "The Good Taste Collection: Baking" by Anneka Manning. He vegetarianised (is that a word?) it and added the all important egg in the middle!
Inspired by my dear readers inspiration, the very next day I kicked myself up the bum (not easy) and gave it a go.
I changed the ingrediants around a bit because I didn't want to go to the supermarket. I added a zuccini for green and yum. Used veggo sausages instead of facon (you know what I mean - that smoky smelling cardboard that does actually tastes like bacon when fried in heaps of oil and chopped really small and covered with other things too). I wish I had chives as was suggested coz I just know they would work so I've included them in the recipe anyway. They took longer to cook for me than is originally suggested and I strongly suggest you line your muffin tin because I pretty much destryoed mine (the muffins not the tin) getting them out of there (hence the squished appearance in the photo!).
I love that instructions on how to boil an egg were included. For all my baking experience and prowess, I continually stuff up the simple egg boiling process. I'm so impatient I usually chuck eggs from the fridge into already boiling water which means they crack and *eurgh* leak every time. I never look at the clock and so the amount of time they have been in is a guessing game and its always pot luck if it is runny or hard. These instructions are completely new to me. If your happy with your egg boiling method, stick to it. But I have included these instructions, not because I think you're dumb, but because sometimes simple things actually are not.
I'd also like to try this with a more basic plain muffin recipe, though the grated potato does add that extra awesome hash brown breakfast element... Who knows, may be this can become a real breakfast thing for us? They are hearty, tasty and healthy (depending on how much cheese you sprinkle on top, heyhey!). Certainly one for the imaginary cafe that every one dreams of owning one day... I know I know, shut up and post the recipe already...here we go...

Then delighting in marvelous Melbourne, which I havn't been to in ohhhhhh seven years! I will be trying my best to be penny pinching (think of the mortgage think of the mortgage) but it's gonna be sooooo hard! I may or may not be here... who knows it's a holiday, I'm not making any plans!

Beauty
It feels vain to say it but sometimes I wish I had time to groom. I mean things like, get my hair cut - it hasn't been cut in a year since the big chop. Shave my legs or *shhh* get a bikini wax. I've even discovered the perks of a manicure - the nail lady can cut my nails far neater than I can, which means I don't bite them because they're not all jaggedy and crap. I guess I could just wake up earlier... but sleep - that's a beauty treatment in itself right? While I work the hours I do - I'll stick to drinking water and wearing sunscreen for the 20mins of daylight I enjoy on the cycle in to work.. and these pretty things can do the hard work for me...

Music Snobbery.
What other people liked used to really influence my taste. It used to be that in my group, as soon as a song got popular we disdained the unfortunate successful band - or enjoyed them... but ironically... I love that now I'm older I kinda don't care so much. I think it must partially be that being a *working person*, not an *in school* person or *uni student* person, there's just less of a group influence. Sure I have friends, but I dont see them every day. Heck currently I don't see anyone once a month (save my husband and housemates). So I kinda just have to decide for myself what I like. It means being a music snob is a lot harder. And really, that's a good thing. Coz music snobbery... it's boring.
Dear readers, I consider myself an individual. An interesting individual no less, and I give my self some indie cred. I like music. I like good music. I like different music. But at the end of the day if its catchy - it's catchy for a reason. So whilst when people ask me what music I like I say: Radiohead, The Shins, The National, TV on the Radio, Mogwai, Trail of Dead, Foals, Pinback, Patrick Watson, The stranglers, Broken Social Scene... that doesn't mean I don't think Phil Collins is a damn fine musician. He is. I also have a small and embarrassing penchant for Linkin Park (Don't judge me!!!) - those angsty songs are so catchy!
Bono and Queen and Abba can kiss my behind though. But JT and Beyonce... they are prettttty talented. May be it's hip now anyway? Who knows? Is listening to Black Eyed Peas deeply ironic? I'm not a hipster. And I don't care. Hooray!

My creative space...
...Has been behind the lens. Last week I did a little product photo shoot for my very talented friend Mia... here are some of the photos and this is where she is starting up her blog and you can buy her beautiful cards from Paper2 in Surry Hills or Berkelouw Books. She draws, then painstackingly cuts out all the images and then they are printed onto beautiful card. She has a bike series, a love series and a book series.
It was so much fun setting up little scenes for the photos. She has a beautiful eye for style and simplicity, she turned her whole bedroom into a gallery for the photo shoot! I'm looking forward to doing more as the series come out!

* Making birthday cupcakes... My first attempt at red velvet from here (no 4) with coffee and chocolate ganache... They were really rather good - and suprisingly velvety.
* And trying to make more necklaces on the bus whilst carrying the above cupcakes..

My Sunday was very lovely though:

One cake short of a sponge.
I got asked to make a sponge cake the other day. I had to do it for work, which meant I made it at 10pm... baking late is almost always a recipe for disaster.
The main problem I had though was that despite having 5 peoples recipe books under one roof (ahh the perks of share housing) not one of them had a sponge cake recipe in. Not one. Jamie, Nigella, Stephanie. They all let me down. Even my trusty op shop find baking book let me down. So rather than turning to my usual internet sources (here) I googled sponge cake, and went with the first recipe. I know! What was I thinking?!
Sponge cake's are notouriously difficult to get perfect, and when it comes to baking, I'm a perfectionist... this all leading up to disaster - can you tell?!
Anyway, So it's 10pm and I'm whipping up a self titled "basic" sponge. It involves room tempreture eggs and sugar being machine beaten on high for six minutes and three types of flour being sifted three times. Eggs at room tempreture? Six minutes? Three times? Phoooey says I! I don't have that sort of time on my hands, hells no. I shall beat it until it is mixed and I shall sift it once. Three sifts sounds like more washing up and mess to me. I know, I know. My gran is shaking her head - Nanna's of the world are shaking their heads. "Oh the young, the time poor, the foolish!" they say.
The cake was flat. Flat as a flat heavy flat thing. It was a cake tasting biscuit. I took it into work anyway and covered it in strawberry jam, brandy butter (an inspired and redeeming touch on my part I must say) and cream. Cream that I whisked with a coat hanger and power drill. Because that's the kind of girl I am. I forget the whisk, I used what I had. Sponge cake aint sponge cake when its flat and heavy but it definitely aint sponge cake without cream. And to be honest it was entirely edible and my sweet collegues even said it was nicer than the shop bought chocolate cake, and not being a huge chocolate cake fan I'm inclined to agree - but it was mainly the thick jam, brandy butter and cream combo that redeemed it.
Do you have an amazing real sponge cake recipe? Please tell me your secrets - because now I must conquer the sponge. I shall not be beaten. I will be a sponge queen, and I will put brandy butter inside it, every time. Because really, if I ruled the world, it's all I would eat.
Brandy butter:
* 125g butter
* 2 tblsp brandy
* 1 cup icing sugar
Beat room temp butter and icing sugar and brandy until combined. Adjust to taste.
Attempt to not spread that stuff on toast. It's bad for you, but oh so good. You're welcome.
