Things to be thankful for.

 * We are home safe and sound and happy.

* 3 new dresses in my wardrobe. I'm a lucky girl!
* The first of my cousins to have a baby has just announced little Iolo (Welsh name) - CUTE!
* The sense of community on a Saturday when you are pottering around on your bike and smiling at everyone in the sunshine.
* Hard core cold and flu medicine.
* Sunflowers. Especially being greeted by them.
* Sunscreen. Oh man do I have English skin.
* My boy's HOT new specs. Oh and health care that covers a lot of the cost of them.
* The beetroot bursting out of our garden.

True story...

 Do me a favour and go read this okay. I'm completely touched and honoured for the mention but mostly completely in awe of the... what is it..  a lack of cynicism  that can so often permeate our culture. It's hot. And because I have stopped, I am sick. Never fear. It turns out Queensland has chemists too, so I've hit myself up with some serious drugs, and Wet and Wild will wait until Wednesday. It's not going anywhere. Nope. And I am still pumped!

Things to be thankful for.


* Holiday tomorrow Holiday tomorrow!
* Coffee. I know. It's been said a million times before. But by Jove. I love it.
* This might be weird, but Tim needs glasses! Glasses plus Tim = HOT!!!
* There is only one more play in the theatre for the rest of the year.
* Cycleways! They are rocking my trip to work right now! I can't help but grin at people as I zip along on our lovely new green cycleways!
* I didnt get run over on my bike (obviously not on a cycleway) last night. It was close.
* Ummm have I mentioned I have a week off work as of tomorrow?
* Getting to see and hang out with my Godmother who has been in the DRC for the last 6 months!
* My dual citizenship. I know how lucky I am to have it.
* The taste of homegrown broccoli.

Interior design proposal

 Being back home reminded me to share a little project I'm tinkering with. It's called: "My parents house". It's a pretty amazing place and they have been doing great things with it. The people who built it originally about 10 years ago didn't really get round to finishing it off though. I'm the type of person that likes control over my space. But. I'm renting. And I'm sharing. So being allowed (thanks ma and pa) to virtually (via email) faff with the decorating and design of my folks place is great fun for me. I've been collecting inspiration pictures, colour swatches and lists of possible products for them for a few months now. They have a large multipurpose room with vaulted ceilings and an amazing view of Australiana fields. Aren't the spaces above gorgeous?
What I decided to do was send them an email package odf the possible changes, step by step, they could do to their kitchen and living area. Because it's so big it's hard to pick a colour, so I sent swatches for them to try. I also made a table showing how they could work out the cost of the re-do.

Spring dinner

 
I had a mini dinner party on Monday night. I wanted it to have a spring time feel to celebrate the incoming season... It's been a while since I posted a recipe (mostly because I think I've written my most regular meals already!) but these stuffed capsicums were the shiz! I based them on Smitten Kitchen's recipe but decided to "spring" them up a little by replacing the feta with haloumi and adding corriander. I served it with this amazing salad which I didn't tweak at all. Seriously. Those croutons. They will blow your mind. And Nigella's hasselback potatoes, with the addition of rosemary.
You need:
* 1&1/4 cups of vegetable stock
* 2/3 cup of cous cous
* 4 extra-large or 5 large capsicum, red are sweetest
* 1 finely chopped onion
* 3 zucchini, halved lengthwise then sliced across thinly
* 6 yellow squash, halved lengthwise then sliced across thinly
* few sprigs of fresh oregano
* 1/2 teaspoon of cumin seeds
* 1 cup cherry tomatoes, cut in half, or more if they are biggies
* 1 can of chickpeas, drained and rinsed
* 500g packet of haloumi, rinsed to rid excess salt and chopped into smallish cubes.
* Large handful of corriander roughley chopped
* oil, salt, pepper

Then:
Heat you oven to 180. Gut your capsicums and scapre out the membrane and all the seeds. I kept the tops for decoration, so cut the seeds off them as well. Line them in a baking tray and give them a light spray with cooking oil. Pop them in the oven for 15 minutes, then remove and set aside until your filling is ready.
Put your stock in a large saucepan on the stove and add the cous cous. Pop the lid on and all the liquid will be gone in a few minutes. Give it a stir to make sure there is no excess liquid and that it is not sticking and take it off the heat. In a large frying pan, sautee the onion and herbs in some olive oil until the onion starts to go clear, add the squash and zuccini and cook until they are soft - about 10 minutes. When they are done add them to the cous cous, along with the cherry tomatoes and chickpeas and corriander.
In a small fry pan, fry the haloumi on both sides in a small amount of oil until it is golden brown. Pat off the oil with paper towel and add to the cous cous.
Give it all a good stir and then fill the capsicums up. Pop the capsicums back in the oven for a further 15 minutes and serve immediately.
Dessert was my lemon delicious pudding with the added bonus of rasberry and schnapps sauce (cook up raspberrys and strawberry schnapps and sugar) and some white chocolate drizzled on top. You need some cool white dairy with this dessert because of the zingy lemon. White chocolate, cream or ice cream can all do the job. Nom.

New camera!

So after a few days we only have the basics down, but we are pretty stoked. We ummed and ahhed and saved up our coffee money. It's a Nikon D5000, came with 2 lenses, 18 -55ml and 55-200ml. You will be seeing it strut its stuff more and more on here no doubt!

Garden review...

 
 
We dug up (read Tim dug up) a patch of the lawn to make more room for vegetables! We have beetroot galore, and fennel and carrots have just started to stick their soft leaves up out of the ground! Hopefully these are more of a success than last years carrots which didnt grow bigger than my pinkie finger (and I have small hands). Also the lemons are turning yellow! It feels like they have been sitting there being green for aggges! I'm going to make pudding with this bad boy tonight! And we have rock & water melons seedlings happening too! Spring is magical right?!

Things to be thankful for.

 
 
 * Our new camera. Yes that's right peeps. We got one. It is niiiiiiiiiiiiiice!
* The sunshine on Thursday. It felt like summer!
* Our sofa is long enough for most guests to sleep on. We don't have a spare room so the long sofa is a blessing.
* All you nice peoples lovely comments this week. It gives me the major fuzzy wuzzies on the inside.
* That I work in such a beautiful part of the city. Dinner break is so pretty. (see pics above)
* Even though it is crazy windy, I've mostly had tail winds on my bike rides to and from work.
* Butter. mmm.
* A script to read, a play to light.
* Big breakfasts.
* Paid annual leave.

Afraid...

Sometimes it's hard to comprehend the phobias and fears that others feel. I for one know people who are scared of feet, another who is scared of bellybuttons and another who is scared of having their neck touched. Strange but true. All this inspired another list, or two actually. Because while recognising fears I thought it important to recognise braveries too.
 
 
 

Things I am afraid of:
* Magpies, mostly just in Spring though.
* Drowning. You won't catch me on a submarine. Ever.
* Car doors opening on me while I'm cycling.
* Being shouted at.
* Spiders.
* Uncooked meat.
* Teenagers en masse.
* Parallel parking. Actually, any parking.
* Marine life... jellys, tadpoles, fishys - nice to look at but don't let them touch me!
* Stuff getting caught under my nails.
* Scary movies. Won't watch them.

Things I am not afraid of:
* Power tools.
* Animals (with the exception of the ones listed above).
* Cycling fast down hill.
* Roller coasters.
* Roller skates.
* Babies.
* Trying new things.
* Getting caught in the rain.
* Being honest (this is a new one for this year).
* Needles.
* Snakes.

 I'm trying to write a story out, but it's hard because it is hurting my heart and my head and it is making me angry even though I probably shouldn't be. And then I don't want to write because I don't want to have to explain myself because part of me doesn't think it's anyone else's business, but folks need to categorise each other and I understand that too. I'm feeling in a limbo with posting, because folks can take what they want from what I write and it might not be what I mean. I need this to be more than just a place to put pretty pictures and other peoples work. I've started and stopped a dozen times now, and I can't remember what's true or what I even think anymore. And now this is just going to sit here. And I shall counter it with some pretty pictures of someone else's work. Nice huh?
